An all-time favorite to many: Stuffed Grape Leaves with Oil. Don’t we love this delicious vegetarian entrée?

Ingredients

  • 50 grape leaves
  • 1 medium potato, cut round
  • 1tablespoon olive oil

 

  • FILLING
  • 4 cups chopped parsley
  • 4 medium tomatoes, diced
  • 4 spring onions, chopped
  • ¼ sweet pepper, diced
  • ½ cup lemon juice
  • ½ cup olive oil
  • 1 teaspoon sumac
  • 1 tablespoon pomegranate molasses
  • 1 teaspoon ground hot red pepper
  • salt and pepper to taste
  • 1 cup white rice

How to Cook:
  • Combine all the ingredients of filling together, mix well. Set aside.
  • Place a pan with water on the stove. When it starts boiling, soak the grape leaves and let boil for 5 minutes. Take off the leaves, put in a strainer and let cool.
  • Open a leave, shiny side down & add one teaspoon of stuffing. Close both sides and fold it.
  • In a small pan, place in the bottom 1 tablespoon olive oil and arrange the round potatoes over oil. Place the folded leaves one next to the other making three layers,
  • Pour the remaining sauce from the mixture of rice and add over water to cover the leaves.
  • Place a plate on top and put a bowl of water over it.
  • Place the pan over stove and cook, when it starts boiling, lower the heat and let simmer for 20 to 25 minutes
  • Prick the leave with a fork to see if they are done.
  • Leave in the fridge for 12 hours before serving.
