A silky sweet potato and potato soup that makes a perfect vegetarian addition to your table
2 big potatoes
2 big sweet potatoes
3 leeks chopped
1 big onion, cubed
3 garlic cloves, cut into round
6 cups of water
½ cup fresh cream
salt and pepper
2 green onions, chopped
½ cup grated mozzarella cheese
How to Cook:
In a pan on the stove, fry onion and garlic with oil until they take color. Then, add potatoes, sweet potatoes, leeks and water. Cook them, when it starts boiling, lower the heat and cook until ingredients are done.
Grind them and stir them on medium heat until it thickens.
Add fresh cream, salt and pepper.
Serve hot, spread on the top cheese and green onion.
