This tasty rich tomato based dish can be prepared the night before, ideal for those busy days.

Ingredients

  • 2  Cups dried red beans
  • 2  Big onions cut in small cubes
  • 6  Cloves smashed garlic
  • 2  Tomatoes cut in cubes
  • 2  Tablespoons tomato paste
  • ½  Teaspoon black pepper
  • Salt to taste

How to Cook:
  • Soak the beans overnight with boiled water
  • Next day, put the beans in a pot with water; let it boil for 10 minutes, then, strain it.
  • Fry the onions and garlic in the high pressure cooker; add beans, tomato paste, salt and pepper. Cover with water.
  • Close the high pressure cooker. Cook for 30 minutes.
