escalope (plain & cordon bleu)

Whether you decide to prepare Escalope Plain or Cordon Bleu, you will enjoy every bite of this special dish. You can serve it with fries, steamed vegetables or any green salad.

Ingredients

½ kilo ground meat

1 egg yolk

1 pinch vanilla

¾ cup bread crumbs

3 tablespoons water mixed with 2 tablespoons powdered milk

salt, pepper and cinnamon

1 cup bread crumbs, to coat

1 cup flour

2 eggs + 2 tablespoons water + vanilla + salt

200 g ham or turkey

200 g sliced mozzarella

How to Cook:

PLAIN ESCALOPPE:

Combine the meat, egg yolk, vanilla, milk and the ¾ cup bread crumbs. Then, add salt, pepper and cinnamon. Mix well.

In a separate bowl, mix 2 eggs with the 2 tablespoons water, vanilla and salt.

Place the flour and breadcrumbs in two separate plates.

Take a piece of the mixture meat, roll it and flat it in the palm of your hands, coat it with flour, then with eggs and lastly with bread crumbs.

Repeat the same procedure until half the meat is done.

Bake in oven or fry and serve with vegetables or potatoes.

ESCALOPPE CORDON BLEU:

Take a piece of the mixture meat, roll it and flat it in the palm of your hands, Place on top one piece of turkey and sliced cheese then, cover with another piece of escalope.

Close it well from all sides then, coat it with flour, then with eggs and lastly with bread crumbs.

Bake in oven or fry and serve with vegetables or potatoes.

All escalopes can be prepared ahead of time and placed in the freezer.
