A light and refreshing Fruits and Vegetables Salad to beat the heat

Ingredients

SALAD:

1 raw beetroot, diced

1 palm, diced

½ mango, diced

2 carrots, diced

1 raw avocado, diced

½ cup corn

½ cup pomegranate seeds

½ cup fried cashews

1 bunch of any kind of lettuce

DRESSING:

¼ cup balsamic

¼ cup olive oil

1 tablespoon mustard

1 tablespoon honey

freshly ground black pepper

salt to taste

How to Cook:

Place the lettuce leaves around a serving plate.

In a bowl put all the ingredients of salad except cashew.

In a cup, put all the ingredients of the dressing and mix together.

Pour the dressing mix onto the salad and mix well.

Place the salad in the middle of the serving plate.

Decorate with cashew
