Ingredients

1 cup gluten-free flour

2 tablespoons organic honey

1 cup almond milk

1 cup water

1 small sweet potato

1 teaspoon baking powder

1 pinch of salt

1 full teaspoon cinnamon powder

1 pinch nutmeg

1 tablespoon olive oil

How to Cook:

Steam the sweet potato and peel it.

In a big bowl, place the flour, sweet potato, cinnamon, baking powder, honey, olive oil, salt, and nutmeg. Mix them with a fork.

Then, add the milk and water. Mix them until you have a batter.

If it is too thick, you can add half a cup of water.

Heat a pan over medium heat. Coat with cooking spray. Place a spoonful of the batter and cook for 5 to 7 minutes.
